Tranquility Bay Resort in Ambergris Caye, Belize

Breakfast at the Tranquility Bay Resort's Tackle Box Bar and Grill is composed of Belize specialties, like fry jack and johnny cake, as well as international favorites. For lunch, anything with the Tackle Box Bar and Grill's homemade barbecue sauce is a winner, like the simple yet irresistible chicken fingers. In the evening, appealing starters include the remarkably fresh ceviche, or the caprese salad (fresh mozzarella, basil and tomatoes). Entrees are generous and filling, especially those featuring seasonal conch or lobster. And of course, that day's catch is readily prepared for fishermen and women.

The highlight of our culinary experience at Tranquility Bay was a beach barbecue. The staff set our table on the sand beside a bonfire, and dished up a Tranquility Bay Grand Slam of conch ceviche, fish, chicken and lobster tails--delicious.
