I Didn't Know They Were Edible!

Hibiscus flowers are even served with breakfast at the Maruba Resort. Our server informed us they were edible. I’d never really thought about it, though I’ve had hibiscus tea before. We tried two of the bright red blooms. They tasted a lot like lettuce.

While the Maruba Restaurant & Bar at the Maruba Jungle Resort offers a diverse menu ranging from locally caught grouper to wild game, the cheese bread served with the black bean soup was my husband’s favorite item. Watch out for the rum punch! Served in a hollow coconut, it’s far more intoxicating than it seems at first sip.

On the prowl for local cuisine? Unfortunately, Maskall Village, the town bordering the Maruba Resort, doesn’t have much in the way of restaurants. The best bet is the Original Rock, a couple miles back towards Belize City on the right-hand side. The food is tasty and inexpensive, and the family is quite colorful: the owner is a esteemed local artist specializing in wood carvings, his wife brews blackberry and cashew wine (for sale), and when we visited, the grown kids had a crocodile and a pair of agoutis in the backyard.
