Ceviche: What is Ceviche?


Definition: Ceviche is one of the most widespread dishes in Central America cuisine, especially in Central America's coastal regions. Ceviche recipes and ingredients vary by season and location, but usually include one or more raw seafood items like conch, lobster, shrimp and/or fish. The seafood is chopped into small pieces, along with tomato, onion and cilantro. The mixture is marinated in lime or lemon juice, which "denatures" the proteins of the fish -- essentially, cooking it -- and kills bacteria.

In most Central America locations, ceviche is served with tortilla chips or soda crackers. In Panama, ceviche often comes with tiny pastry shells, called canastitas.
