Ceviche is one of the most widespread dishes in Central America cuisine
, especially in Central America's coastal regions. Ceviche recipes and ingredients vary by season and location, but usually include one or more raw seafood items like conch, lobster, shrimp and/or fish. The seafood is chopped into small pieces, along with tomato, onion and cilantro. The mixture is marinated in lime or lemon juice, which "denatures" the proteins of the fish -- essentially, cooking it -- and kills bacteria.
In most Central America locations, ceviche is served with tortilla chips or soda crackers. In Panama, ceviche often comes with tiny pastry shells, called canastitas.
