Curtido in El Salvador Cuisine




Definition: Curtido is a spicy slaw made from chopped-up cabbage, carrots, onions and peppers pickled in vinegar. You'll find it a jar on the table of many El Salvador restaurants, and heaped on top of dishes like the pupusa.

In Nicaragua, curtido-like slaw is known as repollo or ensalada de pollo. In Costa Rica, a similar yet spicier tabletop dressing is called chilera.
